Oh. My. God.

I wasn’t going to get fancy with dinner the other night, and definitely wasn’t going to write about it, but then I decided I wanted chicken for dinner. After I made said chicken, I still had to make the asparagus and I had some breading leftover. I remembered reading about someone making asparagus fries the other day, and figured I’d give it a shot. Annnnd the result was the best thing I’ve ever eaten. ever. so good.

Please make these. Now.

Chicken tenders and Asparagus fries (inspired by these)

I guess you could just skip the chicken and make all asparagus, but I didn’t do that so I can’t recommend a serving size!

  • 1 egg
  • splash milk
  • 3 tsp corn meal
  • 2 tsp whole wheat flour
  • chili powder, seasoning salt
  • your favorite spices to taste (i used basil and oregano)
  • salt & pepper
  • 1 chicken breast
  • 6 asparagus stalks

Preheat oven to 350. In separate bowls, beat egg with milk and mix all dry ingredients together.

Thinly slice chicken and dip in eggs + milk, then toss in dry mix till coated. Shake off excess and place on HALF a sprayed cookie sheet. Cook for 8 minutes on first side.

While chicken is cooking, snap off ends of asparagus stalks, and then cut in half. Repeat the process.

Add asparagus to cookie sheet and flip chicken. Cook for an additional 8-10 minutes.

My foolproof method of checking for doneness is cutting the chicken pieces in half: 1. they’re bite-sized and 2. you know they are cooked through!

While the chicken and asparagus were finishing, I made a quick dipping sauce, but 1. the asparagus didn’t need any and 2. it wasn’t great so I swapped it out for some blue cheese i had in the fridge and enjoyed that with the chicken and one of my favorite beers:

If you like fruity beers, you have to try Lindeman’s lambics! My favorite is raspberry but they also make apple, peach, and cherry It’s hard to find on tap and comes in 750ml corked bottles that look super fancy. I love it so much I even got the appropriate glassware… makes it extra tasty!

In conclusion: best. dinner. ever. [with some roasted asparagus for extra healthiness :)]
